From the halls of the Chimay Monastery, Trappist Monks have been producing this high quality cow' milk cheese for centuries. Today's operations are in a local Belgian cheese dairy, but still produced under the monks' strict control. Classic Chimay is supple and pungent, yet buttery in flavor.
