Raniers are an exceptionally sweet variety of cherry grown in California and Washington that arrive before the first Bings show up. They are a cross of Bing and Van cherries (both red) with thin, yellow-pinkish skin. Delicate and super sweet at once, Raniers commonly suffer weather-related bruising and a third of every crop is routinely consumed by birds - making availability limited. Unlike sweet red cherries, Raniers have no counter balancing astringency to speak of - when we say sweet, we mean sweet. Handle them gently, rinse right before eating, and don't let them sit around too long.
