Organically grown upstate New York, Lacinato Kale is also known as Cavolo Nero (black kale), Tuscan kale (very prevalent in that region of Itlay) and even Dinosaur Kale because of its leathery looking leaves. Though Lacinato kale looks tough, it is actutally more tender that regular green kale and works in a salad when de-stemmed and sliced into ribbons. When you cook Lacinto Kale (ok to include a little stem), it melts down into a dense, succulent mass with a rich, deep, forest-y flavor.
