The Masumotos have been champions of preserving heirloom peaches and are regarded as one of the peach best growers in the country since the 1980's. They pick only when their fruit is still firm but only a couple days away from being ready to break, ready to eat. That means you need to let them sit 2-3 days depending on how hard they are when you receive them. Don't refrigerate, leave out on the counter. Tending to be on the large size, with substantial fuzz, they cut cleanly and beautifully with glistening juices on the surface and a rich, musky, sweet-acid flavor.
