Lovely loose heads of Italian chicory the size of bibb lettuce heads with more prominent ribbing. It is a blanched hybrid of Treviso, grown in tight, closed up heads so no light hits the interior. The flavor of Veneto Radicchio resembles Castelfranco in that it is delicate, sweet, and only slightly bitter. Grown in the Veneto region of Italy, we fly them in weekly to keep them super-fresh. Tinged pink to salmon with white and pale green ribbing, these small radicchio heads can be split and grilled, separated into individual lettuce leaves for the salad bowl or used to hold scoops of seafood or grain-based salads. They also make a wonderful platter garnish.
