Sea beans (aka pousse pied, salicornia) is a plant that sprouts wild in salt water marshes and is harvested by hand around the world. They look like bright green twiglets and have a crisp, yet juicy texture when fresh, and distinct salty, caper-like flavor. Blanching will mellow the saltiness considerably. Use raw as a garnish for seafood dishes, add tiny pieces to salads propping up a piece of fish, stick sprigs in sandwiches for a saline bite.
